Blackened Chicken and Sausage Alfredeaux

This is a classic comfort-food favorite with a Cajun Kick. “BLACKENED CHICKEN & SAUSAGE ALFREDEAUX” — a creamy Cajun white sauce, long strands of pasta mixed with tender pieces of lean Blackened Chicken pieces and bits of smoked French Settlement Sausage. For this recipe, we use generous amount of cajun & blackened seasonings, French Settlement Andouille sausage (Or any other FSS of your choice), Rich heavy whipping cream and liberal amounts of freshly grated parmesan cheese. This tricked out version of Alfredo is prepared to maximize flavor and keep family and friends coming back for seconds. If you’re looking for a simple but delicious S. 14oz French Settlement Sausage (mild, hot or green onion)

2lbs boneless, skinless chicken thighs (white meat can be substituted)

16oz Fettuccine noodles

1qt Heavy Whipping Cream

8oz Grated Parmesan cheese

1 canister of Blackened Seasoning

2 tablespoons of Olive Oil
-
Salt, pepper and/or Cajun seasoning of your choice

Slice sausage and quarter the slices (smaller pieces work better for this recipe). Place the sausage in a separate frying pan with and olive oil on medium/high heat until golden brown. Remove from heat and set aside.
Step 3
Cook fettuccine noodles in boiling water. Strain.
Step 4
In a large pot (4-6 quart) heat heaving whipping cream on medium heat, constantly stirring. After about 15 minutes, the cream should begin to thicken up. Once the cream has thickened, add sausage, chicken, noodles and 8oz of grated parmesan cheese. Continue to stir on medium heat until all ingredients are mixed thoroughly. Season accordingly. Remove from heat and let rest for 10 minutes before serving.
