Our Story
French Settlement is a quaint little village nestled along the banks of the Amite River in Livingston Parish. It was first settled in 1800 by French, German and Italian immigrants. The area was a thriving center of commerce, including cypress sawmills, animal trappers, shingle-making, farms, and a steamboat port. This blend of cultures has woven a tight knit community that we call home.
French Settlement Sausage was established in 2000 with a commitment to produce a pure, quality sausage. We make smaller batches to ensure our standards for sausage are maintained. We wanted to create an authentic flavor using a combination of exquisite seasonings and the aroma of hickory smoke. We strive to create a sausage of unsurpassed quality. Our goal is to have high quality “Hickory Smokin’ Good….” products our customers will be honored to serve their guests.

Our Facility
French Settlement Sausage Company has come a long way since it opened in 2000. We have added computerized smokers, automatic sausage linkers, larger grinders and more cooler space to accommodate our growth. Our facility is also state inspected to ensure quality and cleanliness.
Our Process
French Settlement Sausage prides itself on pure quality sausage. Our process takes longer than others but the difference is in the taste. We never add any fillers, soy, gluten or MSG. And our process is unique in that our sausage is 100% hickory smoked….no liquid smoke or artificial colors.
